Wine-making process: Made in the traditional manner with the advantages of modern technology. After being de-stemmed 100%, the Pinot Noir grapes are fermented in stainless steel vats where the vatting lasts for 15 days. After the skins have been pressed, the wine remains in these vats for approximately 3 months in order to obtain a homogenous malolactic fermentation. Once the malolactic has finished, the wines are tranferred to new oak barrels for an ageing of 17 months. Serving Suggestion: Cured meat, grilled pork, poultry, cheese. Laying down: 20 years.
